Prep the beets. <\/strong>Preheat your oven to 400\u00b0F. Rinse the beets and cut off the stems. If desired, reserve the leaves-they can be steamed and mixed into the finished risotto. Wrap the beets in <!-- tasty-links-ignore -->parchment<!-- \/tasty-links-ignore --> and cover tightly with foil.<\/p>\n\n\n\n<p><strong>2. Roast the beets. <\/strong>Roast the beets for 40-60 minutes-you don&#8217;t need a baking sheet, just set directly on the rack. When done, you should be able to pierce them easily with a knife. If not, continue roasting until tender. The more time in the oven, the sweeter and more intense the flavor! Begin the risotto. <\/strong>Add <!-- tasty-links-ignore -->arborio rice<!-- \/tasty-links-ignore --> to the pot and stir for 1 minute, then add wine to deglaze the pan. Once it&#8217;s cooked off, add 1 cup of hot <!-- tasty-links-ignore -->veggie broth<!-- \/tasty-links-ignore -->, kosher salt, and pepper. Scrape up any browned bits and bring to a simmer over medium-low heat. Stir occasionally until absorbed. (the longer they bake the sweeter and more intense the flavor becomes). Let cool and peel if you want-the peel is filled with nutrients. This can be done up to 3 days beforehand.\u00a0<\/li>\n<li id=\"instruction-step-3\"><b>Prep the beets.<\/b> Dice one cup of beets to leave whole.\u00a0 Combine the remaining beets with 1\/2 cup of the broth in a blender,\u00a0immersion blender\u00a0or\u00a0food processor,\u00a0 whip into a smooth puree, set aside. This will give the risotto color, and luscious texture.<\/li>\n<li id=\"instruction-step-4\"><b>Warm the broth.<\/b> Put the remaining broth in a sauce pan on the stove and bring to a simmer.<\/li>\n<li id=\"instruction-step-5\"><b>Start the risotto.<\/b> Heat\u00a0olive oil\u00a0in a\u00a0dutch oven\u00a0over medium heat. Add shallots, saute 2 minutes, add garlic saute for 1 minute or until soft and fragrant. Add\u00a0arborio rice\u00a0and stir to coat for about one minute. Deglaze with white wine and let the wine cook off. Add 1 cup hot veggie broth, salt and pepper, scraping up any browned bits, bring to a gentle simmer, over medium-low heat, stirring occasionally, letting the rice absorb all the broth. \u00a0Add another cup of the hot broth, letting the rice absorb it slowly. \u00a0<\/li>\n<li id=\"instruction-step-6\"><b>Beet Puree. \u00a0<\/b>Stir in the<b> beet puree,<\/b> until rice has absorbed it (I used a heat-resistant silicone <a class=\"tasty-link\" rel=\"nofollow noopener\" target=\"_blank\" data-tasty-links-append-disclosure href=\"https:\/\/bowlandpitcher.com\/products\/the-ultimate-spatula\">spatula<\/a> to avoid turning my wooden spoon pink!). Continue adding broth- stirring often, keeping mind,\u00a0<em>you may not need all the broth.<\/em> Risotto is perfectly cooked when the rice is tender, yet the grains are visible and intact. Not crunchy or mushy- but al dente. <strong>Stir in the diced beets. <\/strong>Loosen the risotto with more broth if needed; you want it loose, not thick like porridge, but not watery.\u00a0<\/li>\n<li id=\"instruction-step-7\"><b>Season. <\/b>Adjust flavor with more salt and pepper if needed. Mix in\u00a0<a class=\"tasty-link\" rel=\"nofollow noopener\" target=\"_blank\" data-tasty-links-append-disclosure href=\"https:\/\/amzn.to\/2Oh9NB0\">goat cheese<\/a>\u00a0(alternatively, just garnish on top) and dill.\u00a0<\/li>\n<li id=\"instruction-step-8\"><b>Serve <\/b>with optional steamed beet greens and\u00a0toasted walnuts.<\/li>\n<\/ol>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\n\t\n\t\t\t<hr style=\"border-color: #DDDDDD !important; background-color: #DDDDDD !important;\" data-tasty-recipes-customization=\"secondary-color.border-color secondary-color.background-color\">\n\t\n\t\n\t\n\t\t\t<div class=\"tasty-recipes-notes\">\n\t\t\t<h3 style=\"text-transform: uppercase !important;\" data-tasty-recipes-customization=\"h3-color.color h3-transform.text-transform\">Notes<\/h3>\n\t\t\t<div class=\"tasty-recipes-notes-body\" style=\"color: #222222 !important;\" data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t\t<p><strong>Beet greens.<\/strong> Steam or saute and serve with the risotto.\u00a0<\/p>\n<p><strong>Walnuts.<\/strong> Optional- make maple-glazed walnuts. 1\/2 cup raw walnuts, 2 teaspoons maple syrup, a grind or two of black pepper, light sprinkle of salt. Toast in the oven at 325\u00b0 for 10 minutes.<\/p>\n<p><strong>Make-ahead option: <\/strong>The beets can be roasted in the oven up to 3 days in advance. Let the cooked beets cool, then store in an airtight container until ready to prepare the risotto.<\/p>\n<p><strong>Storage: <\/strong>Store leftovers in an airtight container in the refrigerator for up to 4 days.<\/p>\n<p><strong>Freezer: <\/strong>Cooled beet risotto can be stored in the freezer for up to 2 months. Thaw overnight in the fridge before reheating. Reheat with a little broth or liquid to revive the texture.<\/p>\n<p><strong>To reheat: <\/strong>Warm on the stovetop with a splash of broth or water, or a drizzle of olive oil. Stir frequently until warmed through.
