Frozen peas or diced veggies work too. You&#8217;ll need 4 cups total. <\/li>\n\n\n\n<li><strong>Onion: <\/strong>Or sub leeks.<\/li>\n\n\n\n<li><strong>Fennel bulb:<\/strong> Or celery.<\/li>\n\n\n\n<li><strong>Garlic cloves<\/strong><\/li>\n\n\n\n<li><strong>Flavorful stock:<\/strong> <a href=\"https:\/\/www.feastingathome.com\/vegetable-stock\/\" target=\"_blank\" rel=\"noreferrer noopener\">Veggie stock<\/a>, vegetable broth, or chicken stock.<\/li>\n\n\n\n<li><strong>Extra virgin olive oil<\/strong><\/li>\n\n\n\n<li><strong>Spices:<\/strong> Salt, cayenne, and coriander.<\/li>\n\n\n\n<li><strong>Herbs: <\/strong>Fresh thyme (or sub-dried thye), fresh parsely and dill; or try tarragon, (my favorite) basil or scallions <\/li>\n\n\n\n<li><strong>Fresh lemon juice<\/strong><\/li>\n\n\n\n<li><strong>Garnish options:<\/strong> Finely grated parmesan cheese or pecorino cheese, gremolata, a dollop of sour cream, drizzle of good olive oil,  crunchy homemade croutons, handful of baby spinach, or fresh herbs. <\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-spring-minestrone-soup-with-chickpeas\">How to Make Spring Minestrone Soup with Chickpeas<\/h2>\n\n\n\n<p>If using dry chickpeas, soak the beans in a bowl of water for 8-10 hours. Drain.<\/p>\n\n\n\n<p><strong>Step 1: Cook aromatics. <\/strong>In a large pot or <!-- tasty-links-ignore -->Dutch oven<!-- \/tasty-links-ignore -->, heat olive oil over medium-high heat. Add onion and fennel. Saut\u00e9 for 2-3 minutes. Reduce to medium heat and cook 5 minutes. Add garlic and thyme, cook 2-3 more minutes.<\/p>\n\n\n\n<p><strong>Step 2: Add stock, water, coriander, cayenne, salt and chickpeas. <\/strong>Bring to a boil, then cover and simmer on medium-low for 20 minutes. (If using canned chickpeas, drain and rinse and simmer 3 minutes.)<\/p>\n\n\n\n<p><strong>Step 3: Add pasta. <\/strong>Bring to a boil. When pasta is about halfway cooked, add the veggies. Avoid cooking veggies too long, or they will lose their beautiful green color!<\/p>\n\n\n\n<p><strong>Step 4: Add herbs, taste, and serve. <\/strong>Stir in parsley and dill or tarragon. Add lemon juice a tablespoon at a time, tasting. Taste and adjust for salt and pepper. (You don&#8217;t want to cook the veggies too long, or they will lose their beautiful green color)<\/li>\n<li id=\"instruction-step-6\">When pasta is cooked and veggies are just tender and bright green, stir in parsley and dill (or tarragon)<\/li>\n<li id=\"instruction-step-7\">Add the lemon juice a little at a time, tasting.
