It&#8217;s a year-round event; however, it seems to ramp up exponentially after the holidays. Give me a good quinoa salad, and I&#8217;m happy!<\/p>\n\n\n\n<p><span style=\"margin: 0px; padding: 0px;\">This Thai quinoa lentil salad recipe was inspired by a recent event at&nbsp;<a href=\"https:\/\/www.hforlove.com\/\" target=\"_blank\" rel=\"noopener\">H is for Love<\/a>&nbsp;(my favorite skincare line),<\/span> and I just kept craving it, so of course, I had to recreate it and share. <\/p>\n\n\n\n<p>You&#8217;ll love that <strong>the quinoa and <!-- tasty-links-ignore -->black lentils<!-- \/tasty-links-ignore --> cook together-<\/strong> they take about the same time to get tender, only 10-15 minutes! While they are simmering, prep the veggies and dressing, and the salad comes together quickly. The best part is it keeps up to 4 days in the fridge, perfect for meal prep and mid-week meals. You can sub green or brown lentils, just check the notes as the cooking times vary.<\/li>\n\n\n\n<li><strong>Veggies: <\/strong>Shredded carrots, shredded cabbage, red bell peppers, English cucumber, snow peas, radishes, jicama, or red onion. Use you favorites and mix and match. Crunchy veggies work best for this salad!<\/li>\n\n\n\n<li><strong>Mint, cilantro, and green onions:<\/strong> Add fresh, fragrant flavor. Feel free to sub Thai basil for the cilantro if desired.<\/li>\n\n\n\n<li><strong>Orange and lime:<\/strong> Citrusy orange zest and both juices are used in this Thai dressing.<\/li>\n\n\n\n<li><strong>Toasted sesame oil:<\/strong> Add toasty, rich flavor to the dressing.<\/li>\n\n\n\n<li><strong>Soy sauce: <\/strong>Sub gluten-free liquid aminos like Braggs if you&#8217;d like.<\/li>\n\n\n\n<li><strong>Maple syrup: <\/strong>Or sub honey for sweetness in the dressing.<\/li>\n\n\n\n<li><strong>Rice vinegar:<\/strong> Adds acidity and tanginess to the dressing.<\/li>\n\n\n\n<li><strong>Lemongrass, garlic, and ginger: <\/strong>Use finely chopped <!-- tasty-links-ignore -->lemongrass<!-- \/tasty-links-ignore --> or paste. Use freshly grated garlic and ginger. Ginger paste and garlic powder can be used in a pinch.<\/li>\n\n\n\n<li><strong>Sriracha:<\/strong> Or use sambal oelek for a little heat.<\/li>\n\n\n\n<li><strong>Optional garnishes: <\/strong>Roasted chopped peanuts and lime wedges.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-thai-quinoa-salad\">How to Make Thai Quinoa Salad<\/h2>\n\n\n\n<p><strong>1. Cook the quinoa and lentils. <\/strong>Add the 1\/2 cup lentils and 3\/4 cup quinoa to a <!-- tasty-links-ignore -->fine mesh strainer<!-- \/tasty-links-ignore --> and rinse for one minute. Drain and transfer to a medium saucepan with the water, salt, and <!-- tasty-links-ignore -->olive oil<!-- \/tasty-links-ignore -->. Mix, then bring to a boil over high heat. Use a fork to fluff up the mixture, then cool. Prep the veggies. <\/strong>Shred and slice the veggies. If meal prepping, cut the cucumbers a little thicker so they hold their crunch. <\/p>\n\n\n\n<p><strong>3. Zest the orange. <\/strong>Then set the zest aside. <\/p>\n\n\n\n<p><strong>4. Make the dressing. <\/strong>Add all of the dressing ingredients to a small bowl (orange juice, <!-- tasty-links-ignore -->olive oil<!-- \/tasty-links-ignore -->, <!-- tasty-links-ignore -->sesame oil<!-- \/tasty-links-ignore -->, <!-- tasty-links-ignore -->soy sauce<!-- \/tasty-links-ignore -->, <!-- tasty-links-ignore -->maple syrup<!-- \/tasty-links-ignore -->, <!-- tasty-links-ignore -->rice vinegar<!-- \/tasty-links-ignore -->, <!-- tasty-links-ignore -->lemongrass<!-- \/tasty-links-ignore -->, garlic, ginger, and <!-- tasty-links-ignore -->sriracha<!-- \/tasty-links-ignore -->, lime juice).
