Don't forget to save some celery leaves for garnish.<\/li>\n\n\n\n<li><strong>Potatoes:<\/strong> Use peeled extra-large russet potatoes or unpeeled Yukon gold potatoes.<\/li>\n\n\n\n<li><strong>Onion and garlic cloves:<\/strong> For a savory, aromatic base of flavor. <\/li>\n\n\n\n<li><strong>Veggie broth:<\/strong> Or sub chicken broth or use \"Better than Bouillon\" Vegetable Base with water.<\/li>\n\n\n\n<li><strong>Seasoning:<\/strong> Bay leaf (optional), salt, black pepper, and cayenne (optional).<\/li>\n\n\n\n<li><strong>Fresh herbs:<\/strong> Fresh dill and parsley are perfect pairings for this soup (small stems are okay).<\/li>\n\n\n\n<li><strong>Sour cream:<\/strong> Use probiotic sour cream or vegan sour cream, or substitute with heavy cream or cashew cream.<\/li>\n\n\n\n<li><strong>Garnish:<\/strong> Crispy celery leaves, nigella seeds, or hemp seeds. All optional, but delicious!<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-cream-of-celery-soup\">How to make Cream of Celery Soup<\/h2>\n\n\n\n<p><strong>1. Saut\u00e9 the aromatics.<\/strong> Heat oil over medium-high heat in a large pot. Add onion and stir occasionally until golden, about 5 minutes. Add garlic and stir 1-2 minutes.<\/p>\n\n\n\n<p><strong>2. Add remaining soup ingredients.<\/strong> To the pot, add celery, potatoes, broth, water, bay leaf, salt, pepper, and cayenne. The liquid should just cover the veggies-add a little water if needed. Cover and bring to a boil, then reduce heat and simmer until potatoes are tender, about 10 minutes.<\/p>\n\n\n\n<p><strong>3. Add herbs.<\/strong> Turn off the heat. Remove the bay leaf, then add the fresh herbs. Be careful not to cook the herbs or you'll lose their vibrant color!<\/p>\n\n\n\n<p><strong>4. Blend the soup.<\/strong> Use an immersion blender or regular blender to blend the soup until silky smooth, about a minute. If using a regular blender, work in batches and place a kitchen towel over top, filling it no more than halfway. For extra green color, add a handful of baby spinach!<\/p>\n\n\n\n<p><strong>5. Gently warm.<\/strong> Pour the blended soup back into the pot and stir in sour cream (or any substitute). Keep the heat low to avoid losing the vibrant green color.<\/p>\n\n\n\n<p><strong>6. Garnish.<\/strong> If making crispy celery leaves, warm a generous amount of olive oil in a small skillet over medium heat. Once hot, fry a \"tester\" celery leaf for 10-20 seconds on each side, then transfer to a paper towel. If crisp, repeat with the remaining leaves, being careful not to overcrowd the pan. If not crisp, fry a little longer. Aim for 3-5 leaves per serving bowl. If desired, use the same oil to fry the nigella seeds until they pop. Arrange the celery leaves in a crescent shape over the soup and spoon some nigella seeds, hemp seeds, and a drizzle of olive oil over top.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-celery-soup-recipe-variations\">Celery Soup Recipe Variations<\/h2>\n\n\n\n<p>Oftentimes, <strong>I&#8217;ll skip the dairy completely <\/strong>and make this with cashews, cooked right in the soup.<\/p>\n\n\n\n<p>Sometimes I&#8217;ll add <!-- tasty-links-ignore -->sour cream<!-- \/tasty-links-ignore --> or creme fra\u00eeche, giving it a delicious tang and extra richness.<\/p>\n\n\n\n<p>Traditionally, it&#8217;s made with butter and <!-- tasty-links-ignore -->heavy cream<!-- \/tasty-links-ignore -->, which is totally fine too. ( If blending warm soup, <em><span style=\"text-decoration: underline\">fill blender no more than halfway full<\/span><\/em>, cover tightly with a lid and <a class=\"tasty-link\" rel=\"noopener\" target=\"_blank\" data-tasty-links-append-disclosure href=\"https:\/\/bowlandpitcher.com\/collections\/tea-towels\/products\/vintage-linen-tea-towel\">kitchen towel<\/a>, <span style=\"text-decoration: underline\"><em>holding it down firmly<\/em><\/span>, when you start the motor (on the lowest setting, working up gradually) to prevent a blender &#8220;explosion&#8221;).<\/li>\n<li id=\"instruction-step-6\">Blend well, a full minute, until herbs are fully blended, creating a vibrant colored soup. For extra &#8220;green&#8221; color, add a handful of raw baby spinach if you like, or more fresh parsley.<\/li>\n<li id=\"instruction-step-7\">Place it back in the same pot over low heat. Stir in your choice of <a class=\"tasty-link\" rel=\"nofollow noopener\" target=\"_blank\" data-tasty-links-append-disclosure href=\"https:\/\/www.target.com\/p\/daisy-pure-38-natural-sour-cream-16oz\/-\/A-13451688\">sour cream<\/a>, or any of the other options.\u00a0<strong><em>Gently heat,<\/em><\/strong> careful to not over-simmer, or you may lose the lovely vibrant color.<\/li>\n<li id=\"instruction-step-8\">To make the crispy celery leaves, heat a generous amount of olive oil in a small skillet over medium heat. Wait until the oil is hot. Fry a &#8220;tester&#8221; celery leaf for 10-20 seconds on each side. Set on a paper towel. If it is crisp, continue on. Adding a few at a time, not overly crowding. \u00a0If not crisp, fry them a little longer. You want about 3-5 leaves per serving bowl. In the same oil, you could fry the <a class=\"tasty-link\" rel=\"nofollow noopener\" target=\"_blank\" data-tasty-links-append-disclosure href=\"https:\/\/amzn.to\/2TYSN4p\">nigella seeds<\/a> until you just begin to hear popping. Turn heat off. \u00a0Arrange the crispy celery leaves in a crescent shape.
