We love Mexican food, as well as sweet potatoes and black beans. I have had mole that was so sweet that it was almost like frosting! From experience, I knew Sylvia would not print a bad recipe! This is…..hands down…..a 100 star recipe! We had leftovers and ate it for breakfast the next morning (at my husband’s request). It was perfect! We have quite a bit of mole left and will freeze it for future use. Way to go. Sylvia!

Delicious! I turned this into a casserole. Sweet potatoes, corn, black beans, seasoning and mole sauce then top with cheese
