I’m making my second batch tonight for a dinner party tomorrow, along with many toppings and Mexican rice. Tonight I’m making the filling simply with sweet potatoes and black beans (and onions, garlic, Serrano peppers, etc.) This time I’m using canned black beans so I roasted the sweet potatoes before adding. This recipe will be on speed dial for a while. Thank you so much!!!
