Appreciate your thoughtful review Chris! Maybe it needs more time in the instant pot? It also depends on the particular stew meat you used. Cubed chuck roast is the best.

The broth was wonderfully flavorful, though like several other cooks commented the stew meat was a bit chewy. I added mushrooms with gave the broth depth and complexity. Tonight the left overs will go over rice with some spinach mixed into the stew. Thank you!

Hi Diane, Sounds like it is more about the cut of the stew meat. Chuck roast will be the most tender, either stew meat precut from chuck roast or you can cube it yourself. Feel free to double the broth ingredients!

The broth was so full of depth! I used stew meat and wasn’t thrilled with it. It was a bit dry and chewy. Any tips? I cut into 1 inch cubes and seared for 4 minutes and then flipped over for another 3 or so. What did I do wrong? Also, I would love more broth;-) Thanks! Love all your recipes!!!

I bought beef stew meat and cut the pieces smaller. I used vegetables I had; colored organic carrots, teeny tiny red and purple potatoes and Jerusalem artichokes from my garden & very small orange beets. I cooked it all in a Dutch oven. After everything was in the pot, I cooked it for about 4 hours at roughly 310° F. I did need to add liquid towards the end. wonderful recipe that turned out great with deep concentrated rich flavors!
