This is my husbands very favorite soup! I fry pressed tofu, top with coconut aminos, and nutritional yeast.

It’s a rainy, gray day here in the Pacific NW so cooked up a pot of this soup to have ready for lunch. It is delicious. I did brown up the chicken thighs beforehand so thank you for all that recommended that step. Thank you for this recipe – will definitely be making it again!d
