Super easy, healthy, and inexpensive! I have now made this many times and use different variations depending on what’s in the fridge. If I have it, I like to add thinly sliced fennel and saute it with the shallots to increase the anise flavor. I will also chop up baby spinach and add it with the basil if I have some leftover from a salad. Also works to use up a few extra mushrooms. In a pinch, I have subbed red onions for the shallots and it has still been delicious. I make this a couple times a month, usually for a lunch meal-prep on busy weeks. For lunch preps, I cook some of the knife cut squiggly noodles from Trader Joe’s and toss them in at the end. Otherwise, I just eat this with jasmine rice and it’s wonderful!

Hello there, I make this all the time and I am wondering -would this work with shrimp instead of chicken?
