So good! I forgot to put the maple & vinegar but it didn’t even need it! I did add a little miso and of course used homemade stock. My vitamix turned a little yellow from the fresh tumeric, even after whizing some bleach water, but c’est la vie.

A great way to serve this is to top is with a splash of olive oil, a squeeze of lime juice and a grind or two of chili peppers.

I made this last night, and it turned out so good. The carrot and ginger together already make a really nice flavour, but the maple syrup honestly made it stand out. It adds just the right touch of sweetness without being overpowering and gives the soup a unique taste. This one is definitely going into my regular rotation. Thanks for sharing such a great recipe!
